Instructions

Make the chili base

  • Heat a large pot over medium heat with a drizzle of oil. Brown the ground beef or turkey, breaking it up. Season with salt and pepper. If using beans only, warm 1 tablespoon oil and start with the aromatics.

Build flavor

  • Add onion and garlic. Cook until fragrant. Stir in chili powder, cumin, smoked paprika, and oregano. Add tomato paste and cook 1 minute to caramelize.

Simmer

  • Pour in crushed tomatoes and broth. Add apple cider vinegar. If using beans, stir them in now. Bring to a gentle simmer and cook 20 to 30 minutes, stirring occasionally, until rich and slightly thick.

Taste and adjust

  • Season with salt and pepper to taste. Add a pinch of sugar if needed. For thicker chili, simmer a few minutes more. For looser chili, splash in extra broth.

Prep the board

  • While the chili simmers, chop toppings and arrange them in small bowls. Offer a mix of creamy, crunchy, fresh, and spicy elements so everyone can build their perfect bowl.

Set up and serve

  • Keep the chili warm in the pot or a slow cooker on warm. Place bowls, spoons, and napkins nearby. Invite everyone to ladle chili, add toppings, and squeeze a little lime.

Notes

Tips: Use two kinds of beans for texture variety. Warm bowls before serving. Chop toppings small so guests can try more. Offer mild, medium, and spicy topping options. Keep a slow cooker on warm for easy refills. Storage: Refrigerate chili up to 4 days or freeze up to 3 months. Reheat on the stove with a splash of broth or in the microwave, and store toppings separately.
