4 ounces vegan cream cheese, softened to room temperature
1/4 cup dairy-free chocolate chips, melted
1 teaspoon alcohol-free vanilla extract
1/8 teaspoon fine sea salt
3 cups chocolate shell-shaped cereal
2 tablespoons powdered sugar for dusting
Instructions
In a large mixing bowl, combine the chocolate cookie crumbs, softened vegan cream cheese, melted chocolate chips, alcohol-free vanilla extract, and salt. Use a sturdy spatula or your hands to mix until a thick, uniform dough forms. The mixture should be pliable enough to hold its shape without crumbling, but not so sticky that it clings to your fingers.
Scoop out about two tablespoons of the dough and roll it into a ball. Gently roll the top half of the ball between your palms to create a slight taper, forming a teardrop or cone shape. Repeat this process with the remaining dough until you have twelve cone-shaped bases. Place them on a tray lined with parchment paper.
Starting at the bottom of a cone, gently press individual cereal pieces into the dough at a slight upward angle. Work your way around the base in a circle, then move up to the next layer, staggering the cereal pieces so they overlap the bottom row. Continue this pattern until you reach the top of the cone, finishing with a single cereal piece pointing straight up.
Once all the pine cones are assembled, place the powdered sugar into a fine-mesh sieve. Lightly shake the sieve over the truffles to create a dusting of snow. This step really brings the Christmas theme to life and covers any small imperfections in the assembly process.
Place the tray in the refrigerator for at least 30 minutes. This allows the cream cheese and melted chocolate to firm up, ensuring the pine cones are sturdy enough to be handled and served without losing their shape.
