Cranberry Pecan Cheeseball

Cranberry Pecan Cheeseball

  • Total Time: 1 hour 15 minutes

Ingredients

  • 16 ounces cream cheese, softened to room temperature
  • 1 cup sharp cheddar cheese, finely shredded
  • 1/2 cup dried cranberries, finely chopped
  • 1/2 cup pecans, finely chopped
  • 1/4 cup green onions, thinly sliced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup extra chopped pecans and dried cranberries for the outer coating
  • 1 tablespoon honey or maple syrup for a touch of sweetness

Instructions

  1. In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Use a hand mixer or a sturdy spatula to blend everything until the mixture is smooth and the spices are evenly distributed throughout the cheese.
  2. Gently fold in the chopped dried cranberries, chopped pecans, green onions, and honey. Ensure that these ingredients are well incorporated into the cream cheese base so that every bite has a perfect balance of crunch, sweetness, and savory onion flavor.
  3. Transfer the mixture onto a large piece of plastic wrap. Gather the edges of the wrap and use your hands to mold the cheese into a firm ball shape. Tie the top of the plastic wrap or twist it tightly to maintain the circular form.
  4. Place the wrapped cheeseball in the refrigerator for at least one hour, or until it feels firm to the touch. This chilling period is crucial as it allows the flavors to meld together and ensures the ball holds its shape when you go to coat it and serve it later.
  5. On a shallow plate, mix the extra chopped pecans and dried cranberries. Remove the cheeseball from the plastic wrap and roll it gently over the mixture, pressing slightly so the nuts and fruit adhere to the entire surface. Serve immediately or store in the fridge until your Christmas guests arrive.
