Cracked Out Cheeseball Bites

Cracked Out Cheeseball Bites

  • Total Time: 30 minutes

Ingredients

  • 16 ounces cream cheese, softened to room temperature
  • 1 packet (1 ounce) ranch seasoning mix
  • 2 cups sharp cheddar cheese, finely shredded
  • 1 cup turkey bacon, cooked until crispy and finely crumbled
  • 1/2 cup green onions, thinly sliced
  • 1/2 cup pecans or walnuts, finely chopped (optional for coating)
  • 24 pretzel sticks for serving

Instructions

  1. In a large mixing bowl, beat the softened cream cheese and the ranch seasoning mix together until the mixture is completely smooth and fluffy. It is much easier to do this if the cream cheese is truly at room temperature, so try to set it out an hour before you begin.
  2. Add the shredded cheddar cheese, half of the crumbled turkey bacon, and half of the sliced green onions into the cream cheese mixture. Use a sturdy spatula to fold everything together until the ingredients are evenly distributed throughout the cream cheese base.
  3. Cover the bowl with plastic wrap and place it in the refrigerator for at least 30 minutes. This chilling period is essential because it allows the flavors to meld and firms up the cheese so it is easier to roll into uniform balls without sticking to your hands.
  4. In a shallow bowl or on a plate, combine the remaining turkey bacon, the remaining green onions, and the chopped nuts if you are using them. Scoop out about a tablespoon of the cheese mixture and roll it into a small ball. Roll the ball in the topping mixture until it is fully coated on all sides.
  5. Place the finished bites on a serving platter or a parchment-lined baking sheet. Just before serving, press a pretzel stick into the center of each ball to act as a convenient handle for your guests. This makes them look like little ornaments and keeps fingers clean.
