3-Ingredient Mini Butter Cookies

3-Ingredient Mini Butter Cookies

  • Total Time: 22 minutes

Ingredients

  • 1 cup (225g) unsalted butter, softened to room temperature
  • 1/2 cup (60g) powdered sugar, sifted
  • 2 cups (250g) all purpose flour, sifted

Instructions

  1. In a large mixing bowl, beat the softened butter and powdered sugar together using a hand mixer or a stand mixer. Continue mixing on medium speed until the mixture looks pale, creamy, and very fluffy.
  2. Turn your mixer to the lowest setting and gradually add the sifted all purpose flour. Mix just until the flour is fully incorporated and a soft dough forms.
  3. Wrap the dough in plastic wrap and place it in the refrigerator for about 15 to 20 minutes.
  4. Preheat your oven to 325 degrees Fahrenheit. Scoop out small portions of dough, about a teaspoon each, and roll them into small balls between your palms. Place the balls onto a baking sheet lined with parchment paper, leaving about an inch of space between each one since they will not spread much.
  5. Place the baking sheet in the oven and bake for 10 to 12 minutes. The cookies should look set and the bottoms should be a very light golden brown, but the tops should remain pale. Remove them from the oven and let them cool on the tray for 5 minutes before moving them to a wire rack to cool completely.
